Wine-making process process Crushing and destemming. After gently pressing the grapes in an inert environment, the must is left to settle on its lees at 5-8°C for 10 days. This is followed by separation of the must from the lees for fermentation at a temperature of 16-18°C Ageing The wine remains on the fine lees for a period of approximately 6 months.
